Here I will share the eaiest method of Dum Chicken briyani,which tastes very yummy and I would like to tell my readers to give it a try and enjoy the taste.Lets see the ingredients required.
Ingredients:
- 500 gms of mutton/lamb
- 4 cup of basmati rice
- 6 tablespoon of oil
- 4 tablespoon of ghee
- 4 clove,2 cinnamon,1 cardamom,1 star anise,1 bay leaf(All the briyani spices in short)
- 1 spoon fennel seeds
- 4 onions medium size,cut lengthwise
- 4 tomatoes medium size,cut into small cubes
- 2 tablespoon of ginger garlic paste
- Handful of coriander leaves
- Handful of mint leaves
- 5 green chillies
- 1 spoon turmeric powder
- 2 spoon chilli powder
- 1 tablespoon thick curd
- 6 cups of water(1 cup rice=one and half cup water)if using basmati rice
- Salt to taste
For cooking mutton,
- 1 spoon turmeric powder
- 1 spoon chilli powder
- Salt to cook mutton
Method:
- Cook mutton in a pressure cooker by adding the ingredients to cook mutton for 4-5 whistles by adding 1 cup water.
- Meanwhile start cooking briyani,In a pan or vessel in which you cook briyani add oil,2 tablespoon ghee and all the briyani spices.
- Add onions and saute till light brown appears.
- Add ginger garlic paste followed by tomatoes,green chillies and fry till mushy.
- Add handfuls of coriander leaves and mint leaves.
- Now add cooked mutton and mix well.
- Once oil oozes out,add the turmeric and chilli powder and mix well with mutton.
- Now add curd an mix well.
- Once raw smell left,add water.After the water starts to boil add rice and check salt.
- On top add,5-6 mint leaves,2 teaspoon ghee,stir and close,keep in high flame,Once the water evaporates,prepare for dum by keeping a heavy bottom pan under the briyani vessel,and a small vessel with water on top of the closed lid.Keep for 20 mins in very low flame.
- Switch off stove after 20 mins.But open only after 10 mins and give a rough stir.
- It goes well with onion or cucumber raita.
Note
- Its very important to cook dum patiently.
- I used iron dosa tawa for placing on dum(irumbu dosa kal)
